Permanent position | Full time | $75,000 – $85,000 per annum
Hours
40 hours per week. Includes weekends, evenings, and occasional split shifts.
Responsibilities
* Prepare and cook high‐quality dishes in line with restaurant standards.
* Manage the grill and sauté section during daily operations.
* Ensure consistency, quality, and presentation of all meals.
* Assist with menu development, specials, and seasonal dishes.
* Maintain high food safety, hygiene, and HACCP standards.
* Follow kitchen cleaning schedules and keep workstations clean.
* Assist with stock control, ordering, stock rotation, and reduce wastage.
* Work efficiently during busy service periods and functions.
* Support and communicate effectively with the kitchen team and front‐of‐house staff.
* Monitor portion control and food quality to maintain profitability.
* Assist in training junior kitchen staff when required.
* Contribute positively to a fast‐paced, professional team‐oriented environment.
* Maintain equipment and report any maintenance or safety issues.
* Be flexible to work weekends, evenings, and occasional split shifts.
Qualifications & Experience
* Certificate III in Commercial Cookery or equivalent qualification.
* Minimum of 2 years experience in a fast‐paced commercial kitchen.
* Proven experience working with seafood, steaks, and premium proteins.
* Strong knowledge of grill and sauté sections.
* Experience in high‐volume service and functions is preferred.
* Sound understanding of food safety, hygiene, and HACCP procedures.
* Experience with stock control, ordering, and stock rotation.
* Ability to work efficiently under pressure in a busy kitchen.
* Excellent organisational skills and attention to detail.
* Strong communication and teamwork skills.
* Reliable, punctual, and professionally presented.
* Creative approach to food and knowledge of hospitality trends.
* Ability to work independently and follow direction from senior chefs.
* Fluent English communication skills.
* Valid Australian working rights.
* Availability to work evenings, weekends, and split shifts.
