Job Description
We are currently seeking a skilled and passionate Chef de Partie to join our culinary team at Pullman and Mercure Brisbane. As an experienced member of the kitchen team, you will supervise operational aspects of the kitchen, ensuring food hygiene and safety procedures are followed.
Responsibilities
* Manage and coordinate activities within your assigned kitchen section
* Ensure efficient workflow and seamless coordination with other kitchen areas
* Maintain impeccable hygiene and kitchen standards in line with HACCP requirements
* Prepare and cook dishes according to our menu specifications and quality standards
* Train and mentor junior kitchen staff, including apprentices and commis chefs
* Assist in menu development and implementation of new food concepts
* Collaborate with the sous chef and executive chef to maintain kitchen efficiency
* Monitor and control food waste, stock levels, and kitchen resources
* Adapt quickly to changing priorities during busy service periods
Qualifications
* Previous experience in a similar role and environment
* Trade qualifications in commercial cookery
* Excellent technical knowledge with experience in all cooking techniques and styles
* Excellent organisational skills and grooming standards
* Genuine commitment to guest service, attention to detail, and passion for the industry
