Your core responsibilities will include:1.
Designing, planning, and executing seasonal menus and daily specials that reflect our brand and appeal to locals and tourists alike2.
Preparing a variety of meals, including grill plates, pub classics, modern Aussie dishes, and share platters3.
Estimating food costs and managing ingredient sourcing, portioning, and stock control4.
Leading kitchen staff in prep, cooking, and plating under busy service conditions5.
Maintaining strict food hygiene and workplace health & safety standards6.
Overseeing storage, handling, and waste management procedures7.
Mentoring junior kitchen staff and upholding a high-performance, team-first culture8.

Certificate IV in Commercial Cookery (or equivalent practical experience with at least one-two years in a Chef role)2.
Proven experience in a fast-paced, high-volume kitchen (pub or bistro experience highly regarded)3.

Excellent understanding of Australian food safety regulations (HACCP knowledge essential)6.
