The Role
We are seeking a passionate and experienced Sous Chef to join the culinary leadership team at Layal, our vibrant new venue that celebrates the rich culture, cuisine, and nightlife of the Middle East. Layal blends the romance and elegance of the evening with authentic Middle Eastern dishes, immersive shisha experiences, and captivating live entertainment.
The Sous Chef is the culinary leader of Layal Middle Eastern Cuisine, responsible for overseeing all kitchen operations, ensuring authentic Middle Eastern flavors, and maintaining the highest standards of food quality, presentation, and safety. This role requires creativity, leadership, and a deep understanding of traditional and modern Middle Eastern culinary techniques.
In this role you'll:
* Oversee daily kitchen operations, ensuring exceptional quality, presentation, and timing in line with five-star standards
* Support menu development and creativity while maintaining consistency and profitability
* Lead and inspire the culinary team, providing coaching & mentoring
* Manage rostering, labour forecasting, and cost control to optimise productivity and meet financial targets.
* Ensure compliance with food safety, HACCP, and health & safety standards, upholding Crown's reputation for excellence
About you
You'll bring the following:
* Extensive culinary experience and operations management specialising in Middle Eastern Cuisine
* Experience and ability to lead large diverse teams with exceptional organisational and time management skills
* Strong business acumen to assist in the monitoring of food and labour costs
* Exceptional communication skills and ability to work collaboratively
* Strong computer literacy, including Microsoft Outlook, Word, and Excel
* Ability to maintain high and consistent food standards
