Chef Wanted – Authentic Asian Hawker Kitchen
Winthrop Hawker's Cafe has been a fixture of Perth's Asian dining scene for over 30 years. We serve authentic Malaysian, Singaporean, and Hong Kong hawker-style food — from Hainanese chicken rice and char kway teow to Cantonese congee, hor fun, and Hong Kong street classics — all made from scratch with real technique and real flavour.
We're looking for a skilled, experienced Chef who knows Asian cuisine from the inside out and can hold the kitchen with confidence, consistency, and care.
About the Role
This is a hands‐on full‐time role in a busy hawker‐style kitchen producing a broad menu of Malaysian, Singaporean, and Cantonese dishes across breakfast, lunch, and dinner service (Monday to Saturday, 9am–8:30pm). You will work closely with the owner‐operators and be a key part of maintaining the quality and authenticity that our regulars have come to expect over three decades.
What You'll Be Doing
* Preparing and executing a wide range of authentic Asian hawker dishes to consistent, high standard
* Managing mise en place, kitchen flow, and station cleanliness through busy service
* Ensuring food hygiene, allergen awareness, and food safety compliance
* Monitoring stock, flagging shortfalls, and minimising waste
* Supporting kitchen coordination and contributing to menu consistency
What We're Looking For
* Minimum 3 years' kitchen experience, with demonstrated ability cooking Malaysian, Singaporean, or Cantonese cuisine
* Trade qualification (Certificate III or IV in Commercial Cookery, or equivalent) preferred
* Strong understanding of hawker‐style cooking — wok technique, timing, and authentic flavour profiles
* Food Safety Supervisor certification (or willingness to obtain)
* Reliable, organised, and able to work independently under pressure
* Genuine respect for authentic Asian food culture and traditions
What We Offer
* $80,000 – $85,000 per annum + superannuation, commensurate with experience
* Full‐time hours across a stable Tuesday–Saturday roster
