Step off King and Flinders Street and into something familiar yet entirely unexpected. We're seeking an experienced Chef who brings skill, organisation and positive energy to help shape our kitchens and deliver food that's unforgettable.
At the corner of King and Flinders, The Waterside is a destination that transports. Across three levels and multiple kitchens, our food story is built on flavour, fire and the energy of Melbourne. From Past/Port Dining & Rooftop with the spice of South-East Asia, to the Public Bar's reimagined classics and events above, every plate matters.
We're looking for a skilled Chef to join the brigade and help lead the charge. Working closely with our Head Chef, you'll run the pass, guide the team and make sure service is smooth, consistent and unforgettable. You'll step up when needed, mentoring apprentices and chefs, developing and testing menus and bringing ideas that lift both quality and efficiency.
This is a hands‐on role, you'll be on the pans, planning prep, keeping food and labour costs in line and ensuring compliance with food safety, HACCP and WHS standards. You'll work across ordering, stock control and rostering and collaborate with FOH and Events teams to deliver seamless service.
What we're looking for:
* Formal trade qualifications in Commercial Cookery (Certificate IV or higher)
* Minimum 3–5 years' experience in a high-volume commercial kitchen
* Proven experience in a senior chef or supervisory role
* Culinary expertise with focus on consistency, presentation and efficiency
* Experience in training, mentoring and developing junior chefs/apprentices
* Solid understanding of WHS, Food Safety, HACCP and Award compliance
* Ability to manage portion control, stock, food costs and wastage effectively
* Passionate, reliable and resilient with the ability to thrive under pressure.
