Responsibilities
* Hands‑on leadership of restaurant, room service and conference & events kitchen operations
* Collaborate with the Executive Chef on menu innovation and seasonal concepts
* Coach, mentor and develop a skilled team of chefs and kitchen staff
* Uphold world‑class hygiene and food safety standards
* Work alongside the Restaurant & Bar team to deliver seamless service and memorable guest experiences
* Bring creativity and flair to every dish that leaves the kitchen
About You
* Proven experience as a Sous Chef or strong Junior Sous ready for the next step
* A natural leader who inspires, supports, and lifts the team around you
* Confident in modern Australian/European cuisine and upmarket food presentation
* Adept at managing prep, service and kitchen systems – with exceptional attention to detail
* Strong time management and multitasking skills – even in the heat of service
* Passionate about staying ahead of culinary trends and creating unforgettable dining moments
* Trade qualifications and full working rights in Australia
* Available across a rotating 7‑day roster, including mornings, nights and weekends
