Our restaurant has been a beloved part of the Drysdale community, serving authentic Chinese cuisine to our local guests. We are passionate about delivering quality food and a warm dining experience, and we are now seeking a skilled and dedicated Cook to join our kitchen team.
You will be required to perform the following duties:
* Prepare, season and cook a full range of Asian dishes on the menu, covering roasted and braised meats, battered and sauced poultry dishes, wok-based stir-fries, rice and noodle dishes, Asian-style curries, soups, and dim sum, ensuring consistent taste and quality in every service.
* Inspect incoming ingredients and foodstuffs before use, checking for freshness, quality and correct quantity, and raise any concerns with management promptly.
* Prepare and organise all ingredients, sauces, stocks and garnishes ahead of each service session, ensuring the kitchen is fully set up and ready before opening.
* Cook food using a variety of methods appropriate to each dish, including wok frying, deep frying, steaming, braising and roasting, while regulating temperatures of ovens, grills and other cooking equipment throughout service.
* Portion, plate and finish dishes to the restaurant's presentation standards, adding appropriate sauces, garnishes and accompaniments before handover to front-of-house staff.
* Store food correctly in temperature-controlled facilities following safe food handling practices, and rotate stock to minimise waste and maintain freshness.
* Prepare dishes to accommodate special dietary requirements and allergen requests as communicated by front-of-house staff, ensuring accuracy and care with every modification.
* Keep all food preparation areas, cooking equipment and utensils clean, sanitised and well-maintained throughout and after each shift, in compliance with food safety and hygiene regulations.
Requirements
* Minimum Certificate IV in Commercial Cookery (or equivalent qualification)
* At least 1 year of professional cooking experience in a commercial kitchen environment, preferably with a focus on Chinese or Asian cuisine.
* Solid knowledge of Chinese cooking techniques including wok cooking, roasting, steaming, and braising.
* Understanding of food safety and hygiene standards
* Ability to work efficiently in a fast-paced kitchen.
* Strong teamwork and communication skills.
* Valid work visa or appropriate work rights to work in Australia.
