About the Role:
Coral Sea Marina Resort is seeking an experienced and passionate Executive Chef to lead our culinary team at the Coral Sea Pavilion Restaurant and oversee food production for all resort functions and events. Reporting to the Resort General Manager, this hands-on role is responsible for creating extraordinary dining experiences, developing innovative menus, and maintaining the highest standards of food quality, presentation, and safety.
Key Responsibilities:
* Oversee all aspects of food production across the restaurant, functions, and events.
* Develop and implement creative and seasonal menus aligned with market trends and guest expectations.
* Manage kitchen budgets, food costs, and wastage while maintaining premium quality.
* Ensure compliance with food safety, hygiene, and WHS standards.
* Lead, mentor, and train kitchen staff to achieve high performance and consistency.
* Collaborate with the Food & Beverage Manager and General Manager to ensure seamless operations.
* Foster strong relationships with suppliers to maintain quality produce and ingredients.
* Manage staff rosters, performance reviews, and training in line with company HR policies.
Skills and Experience Required:
* Minimum 6 years of relevant experience as a Chef, including demonstrated leadership in a high-volume kitchen or resort environment.
* Relevant trade qualification (Certificate III or IV in Commercial Cookery) or equivalent.
* Proven experience in menu development, cost control, and staff management.
* Excellent communication, leadership, and problem-solving skills.
* Strong knowledge of current food trends and culinary techniques.
* Food Safety Supervisor Certificate and Current First Aid Certification required.
