About the Role
The Sous Chef supports the Head Chef in the daily operation of the kitchen within an aged care environment. This role ensures the preparation and delivery of high‐quality, nutritious, and safe meals that meet residents' dietary, cultural, and clinical needs, in accordance with aged care standards and food safety regulations. The Sous Chef plays a key role in maintaining compliance, supervising kitchen staff, and promoting a positive dining experience for residents.
Responsibilities
* Deliver high‐quality, nutritious meals aligned with approved menus.
* Ensure all meals meet residents' dietary, cultural, and clinical requirements.
* Maintain consistency in taste, presentation, and portion control.
* Adhere strictly to all food safety regulations (e.g., HACCP) and aged care quality standards to ensure safe and hygienic food handling and preparation.
* Ensure documentation (temperature logs, cleaning checklists, food safety records) is completed accurately.
* Label all foods and drinks with product name and "Use By" date.
* Complete all assigned training in a timely manner.
* Work collaboratively with the Head Chef, kitchen staff, and care teams to ensure smooth kitchen operations.
* Engage with residents, respond to their feedback and preferences, contributing to a positive dining experience.
Qualifications
* Minimum of 2 years experience in a commercial kitchen with demonstrated ability to perform food preparation and cooking duties independently and efficiently.
* Certificate 111 or 1V in Commercial Cookery (or equivalent).
* Food Safety Supervisor certificate.
* Hospitality experience in Aged Care is highly desirable.
* Understanding of diverse dietary requirements, including texture‐modified diets, food allergies, and cultural/religious food preferences.
* Strong knowledge of food safety and regulatory compliance, including HACCP principles, Australian/New Zealand food safety standards and the Aged Care Quality Standards.
* Familiarity with multidisciplinary teamwork, including collaboration with head chef, catering assistants, kitchen hands and care staff.
