The National Zoo and Aquarium is one of Australia’s most highly regarded zoological institutions and was recently recognised as one of the top two Major Tourist Attractions in Australia at the Australian Tourism Awards. It is also home to Jamala Wildlife Lodge, internationally acclaimed as one of the world’s leading animal lodges.

We are seeking an energetic, professional, and motivated Cook to join our Bistro team. This role will work primarily in our Rhino Bistro, with opportunities to assist across on-site events and functions.

About the Role:

Reporting to the Head Chef, you will work up to 38 hours per week, contributing to daily service, food preparation, team development, and the smooth operation of the kitchen. There may be an opportunity to Full Time in the future.

The National Zoo & Aquarium operates 7 days a week, including weekends and public holidays. Some evening function service will be required.

* Assisting in the preparation and cooking of dishes according to the Chef’s instructions and recipes

* Ensuring that ingredients are properly stored and handled to maintain freshness and safety and that all food and safety regulations and standards are adhered to

* Maintaining a clean and organised workstation, adhering to hygiene and sanitation standards

* Assisting with inventory management, including stock rotation and basic ordering

* Delivering a consistently high level of product quality and presentation

Successful candidate will need to possess the following criteria:

* Minimum 2 years experience as a line cook preferably within a fast paced and/or commercial kitchen

* Organised and responsible

* Someone to complement the excellent team culture already established

* Monitor holding and storage operations, stock and food rotation, and guarantee food service sanitation standards are met

* Strong food safety standard and attention to detail

* Excellent time management skills and the ability to stay calm under pressure

* Ability to communicate clearly with managers, kitchen, and FOH

* A positive, genuine and team-focused attitude with ability to work independently

* Demonstrating appropriate level cooking techniques and procedures

* A high standard of personal appearance and hygiene and adhere to the department grooming standards

* Own transport and driver’s licence

* Must have full working rights in Australia

* Flexible availability over a 7 day rotating roster, including weekend, public holidays and some evenings
