The Opportunity
Peppina is Hobart's signature restaurant, celebrating the heritage of Culinary Director Massimo Mele. Named after his Nonna, Peppina delivers modern Italian cuisine with a distinctly Tasmanian twist. As a Senior Sous Chef you will showcase your culinary expertise through hands‐on leadership, guiding the kitchen team while supporting the overall management of all food-related operations. You will play a pivotal role in enhancing both guest and team experiences, ensuring the highest standards of quality, consistency, and creativity, while contributing to strong financial performance across the kitchen.
Key Accountabilities
* Support the oversight of all kitchen operations, ensuring the consistent delivery of high-quality culinary offerings
* Establish and uphold culinary standards to drive excellence across all areas of the kitchen
* Maintain exceptional food quality and service standards, contributing to an elevated guest experience
* Mentor, coach, and develop the kitchen team, fostering a positive and high-performing environment
* Oversee food preparation across all outlets, including banquets, in-room dining, Mary Mary Bar, and Deco Lounge
* Collaborate with and support stewarding and purchasing functions to ensure smooth and efficient operations
Profile
* Previous experience as a Senior Sous Chef and a Chef trade qualification
* Demonstrated ability to inspire and motivate a team, leading by example
* Strong relationships with producers, ensuring quality sourced produce
* Impeccable attention to detail in all aspects of your work
* Willingness to take initiative and make sound business decisions
* A genuine passion for cooking and a strong customer service focus
* Current knowledge of culinary trends and industry best practices with a growth mindset
* Determination and reliability, with availability to work late nights and weekends as required
