Operating seven days a week, we serve lunch and dinner Monday to Saturday, with a relaxed lunch service on Sundays. The Role
We are seeking a full-time Pastry Demi Chef (Cook Grade 4) to join our in-house pastry team within Cafe Sydney's large kitchen brigade. Reporting to Executive Chef Sarahjane Brown and Head Chef James Green, you will work closely with our Head Pastry Chef to prepare and deliver desserts that complement our modern Australian menu.
This position is predominantly day-shift based with your focus centred on pastry preparation, production, daily specials and mise en place. You will also provide support to the larder section during service, assisting with plating and presentation. Working in a high-volume environment that serves more than 500 covers per day, this role offers the opportunity to refine your pastry techniques, expand your repertoire with premium produce and contribute to the dessert experience of one of Sydney's most iconic dining destinations.
This is a full-time salaried role, paid under our Enterprise Agreement on an annualised basis.
Cafe Sydney operates on a rotating roster across all days of the week.
Shifts are rostered to commence from 7:30am or 3:00pm Monday to Saturday, with a Sunday lunch-only service commencing from 9:00am. There is no flexibility around shift commencement times.
Responsibilities
 * Preparing and producing pastry items, desserts and accompaniments to a consistently high standard
 * Managing pastry prep and mise en place to ensure smooth daily service
 * Assisting with plating and presentation in the larder section during service
 * Upholding food safety, hygiene and HACCP standards at all times
 * Supporting stock rotation, organisation of storage areas, and minimisation of wastage
 * Collaborating with the pastry and wider kitchen team to deliver a seamless and professional operation
About You
 * Relevant commercial cookery qualification (Certificate III or equivalent)
 * Strong technical foundation in pastry preparation and dessert plating
 * Attention to detail, with the ability to balance precision and efficiency
 * A collaborative team player, willing to support both pastry and larder operations as required
 * Flexible availability across the rotating roster, with a predominance of day shifts
 * Full Australian working rights (visa sponsorship is not available for this role)
