Overview
Our client is looking for a talented experienced cook or chef to work in the kitchen team at their stunning newly renovated one location restaurant, winery and hotel. Featuring 50 beautifully appointed spacious suites the resort also includes an original country Homestead built in 1887 that can sleep up to 12 guests. As well as an underground Cellar Door where guests can sample some the best wines from across the region, the property also has an onsite a la carte restaurant & wood-fired pizza oven as well as hosting conferencing and weddings.
Requirements
* Certificate IV with commercial cookery bias is required with at least 12 months of relevant experience within a busy commercial kitchen; at least three years of relevant may substitute for this formal qualification
* You will need extensive knowledge and experience in
* Preparation, seasoning and cooking food to hygiene regulation
* Following recipes and operating kitchen equipment
* Demonstrating an understanding of Australian food safety and HACCP
* Stock and inventory control
* Plating and presentation skills
* Demonstration of an extensive variety of culinary techniques
* Ability to train staff as required
About you
* Relevant experience in a premium restaurant/banquet kitchen
* Enthusiasm and creative approach to providing high-quality cuisine
* Availability to work weekends and public holidays as required within a rotating roster
* Well presented, punctual and reliable
* Be able to help to plan and develop menu's
* Ability to keep your section clean and organised with a good understanding of work flow and structure
* Ability to prioritize and work under pressure
* A passion for quality food and produce
* Own transport required

Salary $76,000-$79,000 + super
