Job Role: Senior Duty ManagerDepartment: Food & BeverageReports to: Venue ManagerResponsible forThe Hotel Rottnest (HR) VenueHR Beverage StockHR Beverage OrderingSupporting Lontara Beverage Manager with Bayside/Lontara Stock counts and orderingPrimary ObjectivesTo assist the Venue Operations Specialist and Venue Manager in the overall operational and fiscal management of Hotel Rottnest.
Oversee the stock control procedures for HR including ordering using the Buy Force system, stock counts, investigating discrepancies and variances, and also assisting Bayside and Lontara in their ordering, counting and control.
To control wages and related expenses in line with budget and forecast expectations to produce required GOP.
Oversee daily operations, ensuring employee productivity, monitoring efficiency of all processes and creating a positive work environment for employees.ResponsibilitiesWork, and develop relationships, with external suppliers to ensure the very best reputation within the industry, and receives the service required to ensure that the operational Food and Beverage team can deliver the highest quality product, and the highest financial return.Work closely with the Venue Manager, Venue Operations Specialist and Lontara Beverage Manager & Stores team to ensure correct stock levels are available and to assist the operational Food and Beverage team.Ensure strict compliance with all relevant Hygiene and Safety legislation and requirements.The job holder will manage Health & Safety, ensuring there is strict compliance with all legislation.Champion a training culture within the Food and Beverage team to ensure success and a culture that exceeds the very best the industry has to offer.Will constantly review the product range to ensure that all key quality standards are maintained.Maintain close, professional, effective links with all.
They will ensure that suppliers deliver to stated agreements, best practices are followed, and technological advances are sought.The job holder will be responsible for maintaining and helping enforce the agreed brand standards.They will also liaise with the Sales and Marketing team to collate and respond to all customer correspondence, ensuring this is communicated to the entire Food and Beverage team, where appropriate.Will assist in budgeting/forecasting and be required to operate within efficient labour budgets for each season, tracking labour spending and providing input regarding capital projects and initiatives.To provide constant leadership, counselling, advice and feedback to their peers.They must provide an environment of openness and trust, with constant feedback and performance coaching.AdministrationTo assist the Venue Manager in the planning and preparation of Budgets and Forecasts for the Venue, Functions and Samphire F&B servicesEnsure that all revenues as per Budget are achieved or exceeded.
Must ensure that all payroll, COS and operating expenses are kept within Budget expectations.To process and code relevant invoices and ensure Buy Force practises and standards are maintained.Responsible for ensuring that payroll administrative requirements are complied with.To deal with all issues relating to employees' queries on payroll, disputes/conflict and misconduct in a timely manner and if unable to resolve to liaise with the Venue Manager.LeadershipOverseeing the smooth running of the day to day operations and being available at all times to effectively resolve any complications which arise in a calm and professional manner which sets the standard for all team members to followProviding your team with guidance and direction on both a daily and strategic level, including providing regular performance reviews and feedbackAcknowledging that all employees are valued and important members of the hotel team and ensuring their contributions to the success of the business are recognised and rewardedAlways using factual and current information in order to make informed and ethical business decisionsGaining and maintaining leadership credibility in your area of operations by exhibiting consistently high standards of personal ethics and behaviour and providing a credible and mature role model to guide your Team.CommunicationActively communicating Samphire Rottnest and Hotel Rottnest's business goalsEncouraging and supporting staff initiatives which may assist those goalsEnsuring effective communication with employees at all levels, through methods such as daily departmental briefings and weekly Department Head meetings.Using the Duty Managers logbook to ensure all relevant outlet information and events are communicated and are also recorded for future referenceEnsuring the flow of information regarding product development and updates to all relevant personnel.Other Relevant DutiesRegular staff training in the areas of service skills and product knowledge, incorporating RSA to ensure exceptional service.Regular liaison with suppliers to ensure continuity of quality products and service.Conduct employee performance development reviews as appropriateProvide training for all employees on all aspects of the departmental operating procedures.In conjunction with HR Manager conduct and document formal coaching, counselling and disciplinary action as requiredComply and abide by all Hotel policies, initiatives and procedures.Abide by all Workplace Health, Safety and Hygiene regulations at all times.Abide by the guidelines set out in the Samphire Rottnest & Hotel Rottnest Employee Handbook.Keep updated on product knowledge of Hotel and related activities.Maintain excellent grooming and hygiene standards.Carrying out any other reasonable duties as directed by the General ManagerUnlock job insightsYour application will include the following questions:Which of the following statements best describes your right to work in Australia?
