Peppers Silo Hotel is an inspiring $30 million redevelopment of the Kings Wharf grain silos in Launceston, Tasmania. The nine-storey hotel consists of 108 rooms, including 52 in the barrels of the former silos, and overlooks the nearby tourist drawcards of Seaport, Royal Park, the Tamar River Basin and Cataract Gorge. On our ground floor you will find Silo Day Spa, and Level 1 you will find Grain of the Silos offering dining experiences across the restaurant, café and Woody's Bar where local produce is at the heart of all creations. Launceston, the largest city in northern Tasmania is a gastronomic hub and offers a diverse range of wineries, distilleries, markets and art galleries to explore during your down time.
Purpose
As the Pastry Chef, you will be the creative force behind our delectable dessert offerings, collaborating closely with our Executive Chef to craft unforgettable sweet sensations that leave our customers craving for more. Your expertise will play a vital role in managing pastry kitchen operations, crafting exquisite confections, and exploring innovative pastry creations, ensuring that every guest's culinary experience is nothing short of extraordinary
Primary Responsibilities
* Take charge of the pastry section of the kitchen, ensuring seamless service and providing assistance to other sections when needed
* Partner with the Executive Chef in devising seasonal dessert menus that stay true to the essence of our establishment while managing ingredient costs effectively
* Mentor and guide junior chefs, facilitating their integration into the team and fostering a culture of excellence and inclusivity aligned with our company values
* Assist in managing administrative tasks within the pastry department
* Ensure strict adherence to food safety standards, hygiene protocols, HACCP guidelines, and workplace health and safety regulations
Skills & Experience
* Proven experience as a Pastry Chef or similar role in a reputable culinary establishment with leadership abilities and track record of effectively managing kitchen teams
* Strong culinary skills and a passion for creating exceptional dishes
* The possession of a Certificate III in Hospitality (Commercial Cookery) – Essential
* Passionate about food and cooking, with a modern approach to menu planning and design
* Personal presentation & communication skills are imperative, along with positive energy & attitude
* Flexibly to work across a range of shifts including weekends and public holidays as required
