Pelikan Société Location: 2 Marine Parade, Hastings, VIC 3915 Employment Type: Full-time, Permanent Salary: $70,000 to $80,000 per annum plus superannuation About Pelikan Société Pelikan Société is a well-established waterfront café and restaurant located on the Hastings foreshore within the Pelican Park Recreation Centre. The business operates as a high-volume hospitality venue with a strong and consistent breakfast, brunch, and lunch trade, servicing both local patrons and visitors to the Mornington Peninsula region.
The venue offers a modern Australian menu with an emphasis on fresh, made-to-order dishes, seasonal ingredients, and consistent quality. Due to the scale of operations, the breadth of the menu, and the need to maintain high standards of food preparation and presentation across extended daily service periods, the business requires an experienced Chef to support menu execution, contribute to menu development, and assist in coordinating kitchen operations. Your Role
We are seeking a qualified and experienced Chef to join our kitchen team on a full-time basis. The successful candidate will be responsible for preparing and cooking menu items, maintaining food quality standards, contributing to menu planning, and supporting the efficient operation of the kitchen. Responsibilities
* Prepare, season and cook a range of menu items in accordance with established recipes and standards
* Assist in planning and developing menus, including seasonal dishes and specials
* Monitor and ensure the quality of dishes at all stages of preparation and presentation
* Coordinate food preparation and workflow during high-volume service periods
* Maintain portion control and presentation standards across all dishes
* Ensure compliance with food safety, hygiene and sanitation regulations
* Monitor stock levels, check the quality of raw ingredients, and assist with ordering and stock control
* Minimise food waste and contribute to cost control within the kitchen
* Work collaboratively with kitchen and front-of-house staff to ensure smooth service delivery
* Maintain a clean, organised and efficient kitchen environment
* Assist in supervising and guiding junior kitchen staff during service where required
Skills and Experience
* At least 2 years of relevant full-time work experience as a Chef
* Relevant qualification such as Certificate III or IV in Commercial Cookery, or Kitchen Management, or equivalent (preferred)
* Demonstrated experience in preparing and cooking a range of dishes in a commercial kitchen
* Experience assisting with menu planning and kitchen operations
* Sound knowledge of food safety, hygiene, and stock control practices
* Ability to work effectively in a fast-paced, high-volume environment
* Strong organisational and time management skills
* Ability to work a flexible roster, including weekends and public holidays
