The \"Pavilions Hotel Terranora\" is a family owned and operated pub overlooking the Tweed Coast hinterland. We are seeking an experienced and dynamic \"hands on\" Head Chef to join and lead our kitchen brigade to drive this successful food business further and realise its true potential.
With amazing panoramic views of the Tweed Coast & Hinterland and only 10 mins from Coolangatta, this multi-faceted hotel is extremely food & functions focused. The hotel consists of the upper level with a 200+ seat bistro and two large function rooms specially designed to cater for celebration events from birthdays to wakes, engagements to wedding receptions on the lower two floors.
As the Head Chef, your responsibilities will include:
* Producing quality, tasty food in a timely manner
* Ensuring effective and efficient kitchen management
* Standardizing recipes, developing and maintaining all kitchen specifications and procedures
* Ensuring all menu items are prepared to these recipe standards and consistency is maintained
* Creation of new menu ideas
* Delivery of function catering options
* Food Safety and EH compliance
* Efficiently allocating resources and effectively executing cost control processes
TO BE CONSIDERED FOR THIS CHALLENGING POSITION YOU WILL NEED:
Australian citizenship or permanent residency status is required for this position.
* At least one years' experience in a similar role in a fast paced, high volume ala carte and functions catering environment.
* Relevant qualifications including food safety legislative requirements.
* Certificate III Commercial Cookery qualification is required.
* Availability to work our busy periods including Weekends
* We close on most Public Holidays!
