Who We Are
The Sporting Club Hotel has quickly become a true local favourite since opening nearly two years ago. It's a proper pub, built around good food, a pint with mates, and a relaxed, welcoming atmosphere.
We're now entering our next stage of growth with the expansion of the Sporting Club "Backyard". This includes a third bar, a second kitchen, and an additional food offering, significantly increasing the scale and pace of the venue. With this comes higher patronage and the need for strong, capable kitchen leadership.
The Role
We're looking for a Senior Sous Chef to join and strengthen our kitchen leadership team.
Working closely with the Executive Chef, Head Chef, Sous Chef and Junior Sous, this is a key role in driving standards, leading service, and supporting the execution of a larger, more dynamic operation. You will be expected to take real ownership of sections of the business, contribute to decision‐making, and lead from the front during busy service.
This is a hands‐on leadership role suited to someone ready to step beyond a traditional sous chef position.
What You'll Do
Lead daily kitchen operations alongside the Head Chef across multiple service points.
Take ownership of key sections of the kitchen, including the new Backyard offering.
Menu development and planning with our Exec Chef and Head Chef.
Drive consistency, quality, and presentation across all menus.
Support menu development and seasonal changes with a focus on scalability.
Oversee stock control, ordering, and cost management with strong commercial awareness.
Maintain and enforce food safety, hygiene, and HACCP standards.
Mentor and develop junior chefs, building capability and accountability in the team.
Take full control of service when required, including deputising for the Head Chef.
Work closely with front of house to ensure smooth, coordinated service across the venue.
About You
Trade‐qualified chef with 4–6+ years' experience, including time in a senior kitchen leadership role.
Proven experience in high‐volume, fast‐paced kitchens with multiple service streams.
Strong leadership presence, able to direct, support, and hold a team accountable.
Solid understanding of food cost control, rostering, and kitchen financials.
Highly organised, calm under pressure, and solutions‐focused.
Passionate about food, produce, and maintaining high standards at scale.
Comfortable working with kitchen systems, ordering platforms, and rostering tools.
Looking to step into a more senior leadership position with real scope.
