About the role
This is an exciting opportunity to join the team at Josh Niland's restaurant - Catseye Pool Club on the stunning Hamilton Island. This full-time position will see you leading a talented kitchen brigade to deliver exceptional culinary experiences for our guests. Working closely with Chef Josh Niland, you will be responsible for overseeing all kitchen operations and cost controls, ensuring the highest standards of food quality and service.
Work in a tropical island paradise, enjoy subsidised accomodation, no commute and days off exploring the beautiful island and reef. Plus mainland QLD is just a ferry ride away.
What you'll be doing
* Lead and manage a team of passionate chefs to consistently execute Josh Niland's menu
* Oversee all kitchen operations, including stock management, food cost controls and health and safety compliance
* Foster a positive, collaborative team culture
* Liaise closely with the restaurant management team to align kitchen and front-of-house operations
* Communicate regularly with Josh and the Saint Peter team to ensure standards are upheld.
What we're looking for
* Significant experience as a Head Chef or Sous Chef in a high-volume, upscale restaurant or hotel environment
* Demonstrated expertise in contemporary Australian cuisine and a passion for showcasing seasonal, locally sourced produce
* Strong leadership and people management skills, with the ability to inspire and develop a talented culinary team
* Excellent time management, problem-solving and decision-making abilities to thrive in a fast-paced environment
* Thorough understanding of food safety, hygiene and workplace health and safety regulations
