Briscola Italian, a premier Italian dining destination in the heart of Canberra, is looking for an experienced and passionate Head Chef to lead our kitchen team. If you're a fully qualified chef with a passion for creating exceptional dishes and leading a team, we want to hear from you

Briscola is in it's 15th year, a true testament to it's authentic food and consistency. It is traditional, without being old fashioned and it seems to suit everyone.

The Role:

We are looking for a skilled and motivated Head Chef to contribute to the success of our kitchen operations. The position will work closely with the Director to run the operational requirements of a commercial kitchen, manage & train sub-ordinate staff, menu planning and communicate with the proprietor. The duties and responsibilities include but are not limited to the following:

* Menu planning as per customer demand and market requirements within the company budget in liaison with the Director.
* Prepare and cook dishes according to the menu and standardized recipes.
* Show intiative for new dishes/ specials and demonstrate Italian cooking knowledge.
* Monitor food rotation, manage stocktake and maintain kitchen equipment.
* Oversee food preparation, ensuring freshness, quality, and adherence to food safety guidelines.
* Discussing food preparation issues with Managers and Kitchen staff.
* May require to recruite and train kitchen staff.
* Ensure consistent food quality and presentation in line with company standards.
* Supervise and train junior kitchen staff, ensuring they adhere to kitchen policies and procedures.
* Contribute to the development of a positive and collaborative kitchen culture.
* Adherence and awareness of Australian food & safety health standards & codes of practice.
* Maintain a clean and organized kitchen, adhering to hygiene and sanitation standards.

About the applicant:

* A genuine passion for Italian cooking and creativity.
* Trade qualifications (i.e. Cert III or IV in Commercial Cookery).
* At least 2 to 3 years experience as a Head Chef in a busy kitchen
* Thorough understanding of food safety standards and HACCP.
* Fully qualified chef with extensive experience in kitchen management
* Strong leadership skills with the ability to mentor and train staff
* A passion for Italian cuisine and creativity in menu planning
* Excellent communication and organizational skills
* Ability to thrive in a fast-paced, high-pressure environment

Job Type: Full-time

Pay: $81,000.00 – $90,000.00 per year

Work Location: In person
