**Food and Beverage Manager - Luxury Estate and Two-Chef-Hat Restaurant**

Beechmont Estate, part of the Morris Escapes collection, is a privately-owned luxury lodge nestled next to the World Heritage-listed Lamington National Park and the rolling hills of Beechmont and Binna Burra.

Situated just 90 minutes from Brisbane and 45 minutes from the Gold Coast, this 75-acre property neighbours the World Heritage-listed Lamington National Park. The estate comprises 20 luxury cabins and pavilions and our award-winning two chef-hat restaurant 'The Paddock'.

At The Paddock restaurant, we serve contrasting, contemporary food with a sense of place. Our menu is a celebration of seasonal, local, and sustainable produce harvested from our very own kitchen garden, and esteemed local suppliers. We're dedicated to crafting a dining experience that is memorable and refined.

This is a rare opportunity to join our leadership team as Food and Beverage Manager. This role works alongside our Executive Chef duo and General Manager to bring to life our dining experience, maintain the highest standards of service, manage costs effectively, and drive the ongoing success of our venue.


Key Responsibilities:

* **Operational Management**
o Oversee all food and beverage operations to ensure exceptional service and guest satisfaction.
o Maintain and elevate service standards in line with fine dining and two-hatted restaurant expectations.
o Implement and refine service procedures, ensuring efficiency and consistency.
o Work closely with the Executive Chef duo to curate a world-class dining experience.
o Ensure compliance with all health, safety, and licensing regulations.
* **Financial & Budgetary Control**
o Manage and monitor Cost of Goods Sold (COGS), ensuring food and beverage costs align with budget expectations. Good understanding of Restaurant P&L's is required.
o Develop and manage F&B budgets, ensuring financial sustainability and profitability.
o Prepare weekly reports for the General Manager, covering revenue, expenses, staffing, and stock control.
o Implement effective inventory management, minimising waste while maximising profitability.
* **Staffing & Leadership**
o Recruit, train, and mentor a high-performing team passionate about hospitality and fine dining.
o Roster staff effectively to meet operational demands while staying within budget.
o Foster a culture of excellence, teamwork, and professional development.
o Conduct performance reviews and provide ongoing training to maintain service excellence.
* **Guest Experience and Brand Representation**
o Ensure all guests receive a premium dining experience with seamless service.
o Handle guest feedback and concerns professionally, resolving issues proactively.
o Work collaboratively with the marketing team to support F&B promotions and special events.
o Represent Beechmont Estate's values and commitment to sustainability and local produce.
