As our Junior Sous Chef, you will be an integral part of bringing our famous relaxed luxury dining experience to life for our guests.
About Restaurant Botanica
In the heart of Pokolbin, Spicers Vineyards Estate is an intimate escape for food and wine lovers. Nestled on its own private, four-acre vineyard, the estate is the Hunter's finest example of seclusion and privacy in a luxury setting. Set within the estate, Restaurant Botanica showcases Australian-grown ingredients and utilises classic and modern French techniques.
Dining at Restaurant Botanica begins with the belief that great Chefs must be great gardeners. The menu delivers produce, picked fresh that morning, with seasonal dishes effortlessly matched with wines from the Hunter Valley – Australia's oldest wine region.
The role and key duties
* Assist in leading the kitchen team to consistently provide a quality and profitable dining experience that is in line with the vision of the restaurant;
* Lead by example to ensure the overall guest experience exceeds expectations;
* Deliver all food experiences for the property including: restaurant dining; functions, weddings, events and experiential dining opportunities;
* Work closely with the Head Chef to ensure the overall success of your team and the retreat, including contributing to menu development, ensure compliance with health and safety regulations, and being responsible for assisting with the daily kitchen operation.
Essential criteria required to be considered
* Chef trade qualification (essential);
* Minimum 3 years experience as a CDP or Senior CDP in a high end and hatted restaurant environment;
* A commitment to assist in leading, training and developing a small team;
* An understanding of BOH operations including ordering, stock takes, rostering, menu planning and financials;
* Ability and willingness to commence work on a rotating roster including weekends and public holidays (essential);
* Located close to our restaurant with a reliable vehicle or a willingness to relocate.
