Attimi delivers a modern Italian fine-dining experience defined by:

* Elevated à la carte
* Two experience-driven degustations: 8 courses and 12 courses, with optional wine pairings
* A service style anchored in precision, warmth, and storytelling — refined, but never stiff
* A distinctive wine program built around Italian and French producers, now at 80+ labels and continuing to grow

With our momentum and national recognition, we are entering our next phase of evolution. We are now seeking a Restaurant Manager capable of elevating operations, strengthening guest relationships, and contributing to the continued national growth of the Attimi brand.

About the Role

We're looking for a highly capable, operationally strong Restaurant Manager to join us from mid January to lead daily service, drive performance, and maintain the standards that define Attimi.

This is not a generic venue‑manager role. You will manage a tightly run 28‑seat room, a high‑performing FOH team, and a guest experience that requires discipline, technical skill, and absolute consistency.

The right person will:

* Own the full operational rhythm of the venue, ensuring smooth and consistent execution every service
* Actively serve guests and lead the floor, delivering the Attimi experience with precision and personality
* Maintain impeccable service standards, aligned with a nationally awarded dining room
* Control all purchasing, supplier relationships, stock rotation, and COGS, maintaining tight cost discipline
* Manage bar operations, including beverage list execution, cocktail standards, stock control, and wine performance
* Oversee reservations, pacing, and guest movement, protecting the integrity of our degustation format
* Collaborate directly with the Executive Chef/Owner and BDM on service design, brand refinement, events, and continuous improvement
* Implement strategies that increase returning guests and maintain 80–90%+ weekend occupancy
* Drive revenue through intelligent upselling, wine knowledge, and relationship building, without compromising guest trust

This role suits someone ready to step into a national-level dining environment and contribute to the long-term brand expansion of Attimi.

About You

You are disciplined, proactive, and capable of leading a small, high-performing team in a demanding environment.

You bring:

* 4–5+ years management experience in fine dining or luxury venues
* Hatted / Michelin / luxury hotel experience strongly preferred
* Strong leadership and communication skills
* Passionate about the industry and eager to see Attimi's next big step
* High emotional intelligence and guest engagement capability
* Deep wine knowledge (Italian, French, Australian)
* Strong organisational and administrative skills
* Experience managing compliance, licensing, WHS, and venue standards
* A mindset focused on refinement, consistency, and results
