The Client
Brumby Narangba is an established bakery located in Narangba in QLD. They are currently looking for an experienced Baker to join their team.
The Role
This is a full time position with an annual salary at $74,000 to $80,000 plus superannuation.
Responsibilities
Some of the duties and tasks will include:
- Planning and estimating daily schedule production of pastry goods with references to product lists, recipes and baking charts and factory order forms
- French Pastries: Make all pastry products, pastry fillings and producing quality pastries including yeast based bakery products
- Dough Making: kneading, maturing, cutting, moulding, mixing and shaping dough for breads, pastries, cookies and sponges
- Baking: Pastries, breads, sponges, cakes, cookies, buns and petit flours
- Testing and Quality Check: all products and processes, diagnosing any faults and making improvements on all products including bread, pastries, cakes and cookies. Maintain all perishable items and ensuring quality compliance
- Follow and apply all workplace information and follow sustainable work practices
- Check the cleanliness of equipment and operation of premises before production runs and ensure compliance with occupational health and safety regulations. Ensure complete food safety and procedures are followed.
- Monitor oven temperatures and product appearance to determine baking times
- Coordinate the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products
- Operate machines which roll and mould dough and cut biscuits, baking trays, tins and other food preparation and cooking equipment
- Bake products according to special dietary requirements
- Budgeting including ordering stock and items according to specified budgets
Requirements
- Must have relevant qualification in Baking or Patisserie
- Experience as a professional Baker with at least 2 years of experience in a commercial bakery
- Must have at least 2 years experience using industrial baking equipment: deck ovens, dough mixers, proofers, sheeters
- Must have at least 2 years of experience in baking bread, pastries, cakes, and specialty items
- Must have at least 2 years of artisan and commercial baking techniques, including fermentation, lamination, and dough hydration control
- Effective English and good communication skills
- Seeking a long term, full time role
- Able to pass a Drug and Alcohol test
- Excellent presentation and communication skills
