The Role: Elevate the Experience
Melaleuka Farm Merchants has a unique opportunity for a skilled Butcher to join our team in Byford. This isn't just a retail role; it is a specialised production position responsible for safely and efficiently preparing and portioning consistently high-quality meat products.
As the guardian of our quality assurance, you will ensure smooth daily production by maintaining strict food safety standards and managing premium inventory. Your primary objective is to showcase our farm's superior, marbled beef, ensuring every cut encourages our customers to return.
Your Key Responsibilities
* Precision Preparation: Portion and prepare meat cuts to specification (weights, trim standards, and customer requirements), ensuring consistency and minimal waste.
* Mastering the Craft: Utilise proficient knife skills for trimming, deboning, and portioning premium grain-finished and grass-fed Wagyu.
* Inventory & Traceability: Pack and label products accurately, ensuring correct batch/traceability and date coding, while managing stock rotation (FIFO) and temperature control.
* Operational Excellence: Operate POS and ordering systems, maintain Food Safety (HACCP) records, and ensure all butchery and BOH areas are kept in peak hygienic condition.
* Customer Interaction: Provide friendly, expert advice on cooking applications (roasting, braising, grilling) and process orders with a focus on exceptional hospitality.
* Team Collaboration: Work daily with the Butcher Team Leader and venue staff to ensure prompt fulfillment of orders and high-standard production.

Mandatory Requirements
* Experience: A minimum of 3 years of full-time experience in a similar meat preparation or butchery role.
* Qualifications: Certificate III in Meat Processing and a Food Handler Certificate. (Chef Trade Certificate or Chemform training is highly regarded).
* Compliance: Strong understanding of WHS, HACCP, and food safety standards.
* Physical Capability: Ability to meet the physical demands of a busy butchery and work within a flexible roster.
