Oceane Hotel is a popular and vibrant hospitality venue in Newcastle, known for its welcoming atmosphere, quality food offering, and strong local following. With a busy bistro service, functions, and events, the hotel is seeking a dynamic and experienced Chef to join its kitchen team and contribute to consistent, high-quality dining experiences. This role is ideal for a motivated Chef who thrives in a fast-paced hotel environment and enjoys working as part of a collaborative team. Key Duties & Responsibilities Preparing, cooking, and presenting food to a high standard across daily service and functions Monitoring and maintaining quality, portion control, and consistency of all dishes Assisting with menu planning, development, and seasonal updates Estimating food and labour costs in consultation with senior kitchen staff and management Ordering, receiving, and storing food supplies, ingredients, and kitchen equipment Managing stock levels, minimising wastage, and maintaining cost control Ensuring compliance with food safety, hygiene, and WHS regulations at all times Assisting with the planning and execution of catering and function services Training, mentoring, and supervising junior chefs, cooks, and kitchen hands Implementing and following kitchen systems, procedures, and standard operating practices Maintaining a clean, safe, and organised kitchen environment About You Relevant commercial cookery qualifications Proven experience as a Chef in a hotel, pub, or high-volume hospitality venue Strong understanding of food safety standards and kitchen operations Ability to work well under pressure and across a rotating roster Team-focused attitude with good communication skills What’s On Offer Secure full-time position Supportive and professional working environment Opportunity to work in a well-regarded Newcastle hotel Competitive salary based on experience Permanent full time role with a starting salary between $76K - $80K (plus super).
