As a Cheese & Baked Goods Production Technician, you will be a key member of our production team, responsible for crafting our specialty cheese products and baked items with precise attention to detail and quality. This role combines hands-on production of cheeses and cookies with a range of support tasks throughout our facility. You will work closely with our production assistants to ensure consistency, safety, and efficiency in all stages of production, while also contributing to our broader operations.
**Key Responsibilities**:
**1. Cheese Production**:
- Operate the cooking tank to produce cheese according to established recipes and formulas.
- Monitor cooking parameters such as temperature, timing, and ingredient measurements to achieve consistent product quality.
- Clean and sanitize the cooking tank and associated equipment thoroughly between production runs to maintain hygienic standards and prevent cross-contamination.
**2. Baked Goods Operations**:
- Prepare cookie dough and bake cookies following precise recipes and formulas.
- Ensure consistent texture, flavour, and appearance of finished bakery products.
- Adjust recipes as needed under guidance, maintaining product quality and meeting production targets.
**3. Quality Control & Compliance**:
- Adhere to food safety regulations, HACCP protocols, and internal quality standards.
- Conduct routine checks on raw materials, in-process products, and finished goods to ensure compliance with quality and safety guidelines.
**4. General Production Support**:
- Assist in packaging cheese products, including labelling, boxing, and preparing for retail and wholesale distribution.
- Serve customers in the shop area when needed, providing product information and maintaining a welcoming environment.
- Assist where needed with the organising and packing of pallets for dispatch, ensuring accurate inventory management and documentation.
**5. Equipment & Facility Maintenance**:
- Wash and sanitise cheese moulds, baking trays, utensils, and other production tools.
- Maintain a clean, safe, and organised workspace, including floors, surfaces, and storage areas.
- Follow start-up and shut-down protocols for machinery and factory, ensuring all equipment is properly cleaned and secured at the end of each shift.
**Qualifications & Experience**:
- Previous hands-on experience in food production, preferably in cheese, dairy, or bakery operations.
- Familiarity and experience with following formulas, adjusting recipes, and working with standardised procedures.
- Knowledge of bakery techniques, specifically related to cookies or similar baked goods.
- Strong attention to detail, time management, and the ability to work efficiently under mínimal supervision.
- Demonstrated commitment to food safety, cleanliness, and maintaining high-quality standards.
