The Opportunity
We are seeking a talented Chef De Cuisine - Functions to lead our culinary team at the Melbourne Cricket Ground (MCG), a renowned venue hosting major sporting events, concerts and functions.
This dynamic role requires a seasoned professional with exceptional culinary and leadership skills to oversee event-day and non-event-day functions. The successful candidate will have experience in managing large-scale kitchen operations, developing innovative menu concepts and mentoring a diverse team.
Key Responsibilities
* Oversee all culinary operations across event-day and non-event-day functions.
* Deliver high-quality catering experiences for various events, including small meetings, conferences, gala dinners and corporate events.
* Develop innovative menu concepts aligned with current food trends and guest preferences.
* Provide strong leadership, mentorship and training to a diverse culinary team.
* Set, implement and review high food service standards and manage department budgets, food costs and labour costs.
Requirements
* Proven experience managing large-scale function and event kitchen operations.
* Demonstrated success in leading, developing and motivating a large, diverse kitchen team.
* Experience in menu development, stock control and cost management.
* Strong commercial acumen with a track record of delivering business outcomes.
* Relevant culinary qualifications and proficiency in business technology.
