The Sovereign Resort Hotel Pty Ltd, located at 128 Charlotte St, Cooktown QLD, 4895, is seeking a talented and dedicated Demi Chef to join our culinary team.
This is a full-time position. The successful candidate will receive a yearly salary of $76,759.80 FTE Per Annum plus 12% Superannuation. As a Demi Chef, you will work closely with the Head Chef, playing a crucial role in maintaining our high standards of food preparation and presentation, and contributing to the development of our junior staff.
Core Responsibilities & Duties
* Culinary Excellence: You will be responsible for the skilled preparation and execution of a diverse menu. This includes ensuring all raw ingredients meet our stringent quality specifications through careful examination before use.
* Operational Precision: Maintain the optimal thermal regulation of all kitchen equipment, including ovens, grills, and ranges, to guarantee consistent cooking results.
* Artful Presentation: Master the finishing touches by meticulously portioning each meal and applying gravies, sauces, and garnishes to create a visually stunning plate.
* Food Safety and Integrity: Ensure the secure and hygienic storage of all food items in designated, temperature-controlled environments to uphold strict health and safety protocols.
* Specialized Cuisine: Demonstrate proficiency in creating meals tailored to a wide array of dietary needs, including vegetarian, vegan, gluten-free, dairy-free, lactose-free, and keto.
* Team Leadership: Contribute to the overall success of the kitchen by assisting with the training and guidance of apprentices and other junior staff.
* Planning and Management: Depending on operational needs, you may be involved in menu planning and providing estimates for food requirements.

Qualifications & Required Skills
· A relevant AQF Certificate III with at least two years of on-the-job training, or an AQF Certificate IV, or an overseas equivalent. At least three years of relevant experience may substitute for the formal qualifications.

* Attention to Detail: The ability to maintain a high level of accuracy and precision in a fast-paced setting.
