The Pastry Chef at Lavie&Belle Bakery (L&B BAKERY PTY LTD) is essential for the preparation, production, and presentation of all French pastry products to the highest standards.
Working closely with the Pastry Chef Lead and Bakery Director, you will ensure consistency, creativity, and authenticity across all products, including croissants, tarts, entremets, and seasonal specialties.
This is a full-time, permanent role based in our Sydney locations.

Task & Responsibilities
Prepare and produce daily pastries, viennoiseries, and desserts using traditional French techniques.
Maintain consistency in taste, texture, and presentation across all products.
Develop new recipes aligned with the Lavie&Belle brand and seasonal menus.
Ensure correct storage, labelling, and rotation of ingredients to minimise waste.
Assist in stock management and ordering of ingredients.
Maintain cleanliness and organisation of the pastry kitchen in accordance with food safety standards.
Train and mentor junior staff or apprentices in pastry preparation techniques.
Collaborate with the Pastry Chef Lead and Director on production planning and event catering requirements.
Ensure compliance with HACCP and NSW Food Safety Standards.
Participate in tastings, meetings, and product improvement discussions.
Qualification & Experience
Formal qualification in Pâtisserie or equivalent professional experience.
Strong knowledge of French pastry and viennoiserie techniques.
Ability to work efficiently in a fast-paced production environment.
Excellent attention to detail and artistic presentation skills.
Good communication and teamwork abilities.
Knowledge of food hygiene, safety, and temperature control.
Creative mindset with a passion for French culinary tradition.
