We are seeking a highly skilled Full-Time Pastry Lead to join our talented team and lead the creation of exceptional desserts, pastries, gelato, and sorbets that showcase our reputation for quality and creativity.
?Duties & ResponsibilitiesAs a Pastry Lead at Carnivore, your key duties and responsibilities will include (but are not limited to):*Preparing, baking, and finishing a wide range of pastries, cakes, breads, desserts, and plated sweets.
*In collaboration with the chef team, designing and developing innovative dessert concepts, seasonal specials, and signature items for menus.
*Creating desserts and cakes for functions, weddings, and special events, tailored to client requirements.
*In collaborations with the Chefs, develop new gelato and sorbet flavours, with a focus on seasonal and locally sourced produce.
*Working within set budgets and being mindful of stock control, minimising wastage, and maximising profitability.
*Overseeing daily pastry section operations, including workflow planning, production schedules, and quality control.
*Monitoring stock levels, ordering ingredients and supplies, and ensuring cost efficiency with minimal wastage.
*Maintaining strict adherence to food safety, hygiene, and workplace health & safety standards.
*Ensuring consistency in product presentation, portioning, and quality across all service periods.
*Collaborating with the Head Chef and wider kitchen team to align pastry offerings with the overall menu.
*Maintaining cleanliness, organisation, and efficiency in the pastry kitchen at all times.
?Skills & Experience Required*Relevant Trade Qualification and 12 months experience ORMinimum 5 years of relevant full-time experience in professional pastry kitchens.
*Excellent technical skills across pastry, chocolate, sugar work, gelato, sorbet, and contemporary dessert techniques.
*Strong organisational and leadership abilities, with proven experience supervising other staff.
*Ability to work with seasonal produce, balancing creativity with practicality.
*Strong financial awareness with the ability to work within budgets, minimise stock wastage, and maximise profits.
*Ability to thrive under pressure, multitask effectively, and meet deadlines in a high-volume kitchen.
