Nick & Nora's Parramatta is seeking an experienced, values-driven Head Chef to lead our kitchen and deliver refined and approachable share plates and bar snacks that match the glamour and energy of our level 26 skyline setting.
This is a senior leadership role for a chef who understands that precision, presentation, and pace matter just as much as flavour. You'll be accountable not only for what leaves the pass, but for how the kitchen performs day to day.
The Role
As Head Chef, you'll take full ownership of food quality, menu development, team leadership, and financial performance. You'll lead from the pass, set clear standards, and build a kitchen culture that is tight, professional, and sustainable.
Nick & Nora's is evening-focused, with structured dinner services that allow for clear planning and strong work-life balance. No early-morning starts, no breakfast trade — just focused, high-quality service in a premium bar environment.
This is a small kitchen with a small team — ideal for a chef who enjoys ownership, efficiency, and high standards without unnecessary hierarchy.
Key Responsibilities Food & Guest Experience
* Lead the team to consistently deliver elevated bar snacks and share plates to a premium standard
* Drive menu development aligned with the Nick & Nora's brand, beverage offering, and seasonal produce
* Maintain consistency, presentation, and service pace during high-volume periods
Leadership & Team Development
* Build, mentor, and retain a strong, collaborative kitchen team.
* Train and develop junior chefs with clear expectations and accountability.
* Foster a respectful, safe, and sustainable kitchen culture.
Operations & Commercial Performance
* Manage wages, rostering, food cost, and COGS to meet agreed targets.
* Maintain tight ordering, stock control, and prep systems within a compact kitchen.
* Work closely with venue leadership to ensure food complements beverage and guest experience.
* Ensure compliance with food safety, WHS, and company standards.
About You
* Proven experience as a Head Chef or Senior Sous Chef ready to step into full ownership.
* Strong leadership skills with a calm, organised presence under pressure.
* Confident in running a small team efficiently in a fast-paced, premium environment.
* Commercially aware with solid cost control capability.
* Passionate about quality share-style dining and refined bar food.
