Job Summary:

This position will oversee the full operation and management of accommodation, food and beverage, restaurant, guest services and hotel administration functions.

","

The role includes oversight of food service operations, restaurant management, staff coordination, accommodation bookings, guest services, compliance, supplier management and financial performance.

","

Key Responsibilities:

","
","
* Hotel Accommodation & Guest Services
","
","
o Oversee day-to-day operations of the motel accommodation, including reservations, guest check-ins/outs, room allocation, and housekeeping coordination.
","
o Manage guest relations, address service issues and implement service recovery measures to ensure guest satisfaction.
","
o Monitor room occupancy, corporate bookings, and maintain accurate property management system records.
","
o Liaise with maintenance contractors to ensure facilities are maintained to high standards.
","
","
* Food & Beverage / Restaurant Operations
","
","
o Manage the full restaurant and café operations including breakfast, lunch, dinner, catering and special functions.
","
o Supervise kitchen, bar, and front-of-house teams to ensure service standards, food quality, and presentation consistency.
","
o Oversee food and beverage cost control, supplier pricing, ordering, stock rotation and waste minimisation.
","
o Collaborate with chefs on menu development, seasonal specials, and pricing strategies.
","
o Monitor health, safety and hygiene standards in food preparation and service areas.
","
","
* Staff Management & Rostering
","
","
o Recruit, induct, train, roster and supervise staff across multiple departments including front desk, housekeeping, restaurant and kitchen teams.
","
o Monitor staffing levels, shift coverage, staff leave, performance management and conflict resolution.
","
o Conduct ongoing staff training in customer service, food safety, WHS and hotel standards.
","

* Compliance & Licensing
","
","
o Ensure full compliance with all regulatory requirements.
","
o Maintain hotel permits, licences and regulatory documentation.
","
","
* Financial Control & Reporting
","
","
o Monitor financial performance including revenue, expenses, payroll, food costs and operating margins.
","
o Conduct daily reconciliations, POS management, and banking procedures.
","
o Prepare operational reports for company directors, highlighting financial trends, service performance and risk management.
","
","
* Supplier Management
","
","
o Liaise with suppliers for food, beverages, accommodation consumables, linen, cleaning supplies and operational needs.
","
o Negotiate supplier contracts, review pricing and maintain supply continuity.
","
o Conduct monthly stocktakes and inventory reconciliations.
","
","
* Coordination with Retail Manager
","
","
o Work collaboratively with the Retail Manager (Bottle Shop, Gaming & Bistro Operations) to ensure smooth coordination across all business units.
","
o Provide operational backup across food & beverage operations when required.
","
o Support cross-department management to ensure full service continuity.
","
","
","

Selection Criteria:

","

Minimum 12-24 months relevant hospitality management experience in food & beverage and/or accommodation operations.

","

Proven staff leadership, rostering and team management skills.

","

Demonstrated capability in restaurant, kitchen and guest accommodation management.

","

Solid knowledge of food safety, RSA, WHS and regulatory obligations.

","

Strong customer service focus and complaint handling skills.

","

Financial acumen including budgeting, cost control, banking and reporting.

","

Excellent supplier management, stock control and purchasing coordination experience.

","
