To help lead the kitchen team to develop a unique dining experience for our guests across our bars, restaurant, private dining spaces, conferencing and events spaces, and in-room dining offering.
The successful candidate must be a strong leader, have the ability to help coordinate large teams across multiple kitchens, possess excellent cost control, and repeatedly achieve solid results compared to budget and prior year. You must be hands-on throughout the operation and it is expected that you spend peak periods with the team getting your "hands dirty" and leading by example.
Key Responsibilities
* Passion to push innovation and creativity developing seasonal and rotating menus across the restaurant, private dining spaces, and special events.
* A passion for your team and developing your people.
* Commitment to maintaining high and consistent standards of products across all food and beverage outlets.
* To have a full knowledge of, and practice the hotel’s established occupational health and safety guidelines (OH&S) & HACCP.
* Excited to work collaboratively with the Executive Chef, Director of Food and Beverage, Venue Managers and Marketing Teams.
* In-depth understanding and experience managing financial reporting including: menu costing, COGs, labour, wastage.
Skills & Experience
* Must have minimum 5 years’ experience in a similar position.
* Ability to work a range of shifts including weekends, nights, and public holidays.
* Strong written and communication skills.
