Mount Erica Hotel is one of Melbourne's oldest pubs, nestled in the heart of Prahran. Locals come in for a quick pint, unwind in our sunny courtyard, or book in for our bustling steak nights. We're a busy, dynamic venue with a loyal following, British-Australian roots, and a menu that moves with the seasons.
We're looking for a talented Sous Chef to join our senior kitchen team and help lead the charge. You'll work closely with our Head Chef and Senior Sous to ensure smooth day-to-day operations, coach junior chefs, and run the kitchen with calm confidence.
About the Role
This is a hands-on leadership position, best suited to someone who thrives in a fast-paced kitchen and leads by example, not pressure.
You'll be:
* Cooking on the pans (particularly grill) during service
* Assisting with food ordering, stock control and kitchen admin
* Maintaining kitchen systems, cleanliness, and compliance
* Running shifts and delegating tasks clearly and respectfully
* Liaising with the Head Chef on menu development and specials
* Where needed attend daily briefings and work closely with FOH and Functions teams
You'll work in line with another Sous Chef and be a part of a daily 13–14 person kitchen team that thrives on energy, respect, and sharp timing. Experience in high-volume venues is essential, and a background in British-Australian cuisine is a bonus.
You'll Need:
* Certificate IV in Commercial Cookery (or equivalent) – essential
* Minimum 3 years' experience in a professional kitchen
* Experience on grill and in high-volume service
* Up-to-date Food Safety and Food Safety Supervisor certifications
* Confidence managing prep, service, and keeping a clean, calm kitchen
