Head Chef
As our Head chef of 6 years is moving out of the area Sorrento at Airlie Eats Pty Ltd ATF Airlie Eats Trust T/as Sorrento Restaurant and Bar Airlie Beach QLD 4802 are looking for Head Chef on a Full time Permanent & ongoing basis, for their extremely Busy restaurant at Shop
20 1-3 Shingley Drive, Airlie Beach OLD 4802, they require Head Chef with a strong background of cooking Italian and Australian cuisine for a busy multi-cuisine Restaurant in Far North QLD.
Mentioned below are the requirements, duties and roles of the right candidate, but they are not limited to the following:
- Must have Australian work experience as a Head Chef in a busy kitchen/restaurant.
-Be able to Lead a team of 12 to 14 people
-Be fully conversant with the health and safety regulation in Australia.
- Be able to work ODD hours.
- Construct menus with new or existing culinary creations ensuring the variety and quality of the servings.
- Examining foodstuff to ensure quality.
-Regulating temperatures of ovens, grills and other cooking equipment.
-Preparing, cooking and seasoning food.
-Portioning food, placing on plate, adding gravies and garnishing to the Dishes.
-Storing food in temperature controlled facilities.
-Preparing food to meet special dietary requirement.
-Required to estimate and prepare the food for catering orders.
-Suitable candidate must be able to work as a team in under pressure environment.
Also, we expect the candidate to follow all preset recipes, be able to adjust them too as per the
requirements of the customers and be able to train junior kitchen staff in the basic handling of duties.
Duties
- Prepare, season and cook food as directed, meeting dietary requirements where required
-Menu planning
-Creating recipes and presentation specifications
-Operate standard kitchen equipment safely and efficiently
-Oversee and manage kitchen operations
-Clean and organize kitchen and equipment in adherence to hygiene and safety regulations
-preserve and store foodstuffs in appropriate temperature controlled facilities
- Train apprentices and other kitchen staff
Additional duties
- Recording food temperature
- Preparing reports for management
