Your Employer Our client is a large-scale integrated cattle and beef production enterprise operating across Northern Australia. The business spans cattle breeding, backgrounding, feeding and processing, supplying premium beef products to domestic and international markets. Your Role The Butcher will be responsible for preparing and processing meat products to support station kitchen operations and associated facilities. This full-time role involves breaking down livestock, preparing meat cuts, producing smallgoods, maintaining cold storage facilities and ensuring compliance with hygiene and food safety standards. Key Responsibilities • Remove bones, trim fat, portion, mince and grind meat to required specifications • Prepare steaks, stew meat, stir fry portions and other station kitchen requirements • Prepare crumbed, marinated, seasoned and cured meat products as required • Produce sausages and smallgoods, including operating mincing and sausage filling equipment • Prepare brine, seasonings and spice mixes in accordance with established recipes • Operate and maintain meat processing equipment including grinders, mixers, filling machines and cold storage facilities • Package, label and rotate meat stock to ensure proper inventory management • Maintain cleanliness and hygiene of butcher shop, freezer, cold room and equipment in line with food safety standards • Maintain stock control of ingredients and supplies and assist with ordering as required • Comply with animal welfare, workplace health and safety, and biosecurity requirements Skills and Experience Relevant trade qualification as a Butcher or equivalent • Minimum 3 years of relevant post-qualification experience in meat processing or butchery • Demonstrated experience in carcass breakdown, portion control and smallgoods production • Ability to operate meat processing machinery and maintain equipment • Strong understanding of hygiene, food safety and safe handling practices • Ability to work in remote environments and manage workload independently Salary and Benefits $76,000 to $80,000 per year plus superannuation • Full-time position
