Bankstown Sports Club has an exciting opportunity for an experienced Restaurant Manager to join and lead our high‐performing, upmarket steakhouse, Marrow & Co.

We are seeking an experienced and highly motivated Restaurant Manager who is passionate about hospitality and ready to bring the vision of Marrow & Co to life.

As the Restaurant Manager, you will oversee the day‐to‐day operations of the venue, including food and beverage management, event coordination, and catering support. You will play a pivotal role in delivering exceptional dining experiences while ensuring operational excellence.

This role is responsible for the efficient and effective leadership of both Marrow & Co and Greenfield Station Bistro, driving performance across service, operations, and team engagement.

As a hands‐on leader, you will champion outstanding customer service standards, inspire and develop your team, and lead by example to create a culture of excellence across both venues.

Responsibilities

* Provide strong leadership, guidance, and supervision to all team members, with a particular focus on developing and supporting the management team.
* Foster a positive, inclusive workplace culture that promotes teamwork, recognition, mutual respect, engagement, and employee satisfaction.
* Allocate duties effectively and delegate tasks appropriately to maximise team capability and accountability.
* Regularly engage and communicate with team members to build rapport, encourage collaboration, and maintain a cohesive and respectful team environment.
* Lead performance management and appraisal discussions, modelling a positive, proactive, and 'can‐do' attitude at all times.
* Ensure consistently high service standards and outstanding patron satisfaction across the Steakhouse and Bistro.
* Curate and oversee a premium food and beverage offering, including expert knowledge of meat cuts and the sourcing of high‐quality, sustainable produce.
* Lead the development and execution of a dynamic beverage program, including wine selection and tailored cocktail pairings that complement seasonal menu offerings.
* Collaborate with sommeliers, mixologists, and key stakeholders to ensure the dining experience aligns with brand standards and guest expectations.
* Work closely with events and central reservations teams to drive visitation, secure and convert event bookings, and optimise the use of private dining spaces.

Operational Leadership

* Lead and manage all restaurant operations to achieve policy objectives, operational excellence, business growth, and optimal financial performance.
* Oversee venue compliance with all relevant Club policies, hospitality industry regulations, and legislative requirements.
* Create, manage, and monitor the venue budget, ensuring effective control of COGS, labour costs, inventory, and overall profitability.
* Analyse food, beverage, and financial data to identify business opportunities, drive continuous improvement, and support informed decision‐making.
* Plan, develop, and implement strategic initiatives to enhance service standards and business performance.
* Collaborate with senior leadership on significant operational matters, preparing reports, insights, and recommendations as required.
* A minimum of 2-4 years' experience in a similar hands‐on managerial role.
* Wine and cocktail pairing knowledge.
* Excellent knowledge of different cuts of meats and produce.
* Sound understanding of COGS, labour costs, budgets.
* Experience with staff recruitment, training, and ongoing development.
* Ability to cultivate relationships with guests, club members, local businesses, and industry partners to enhance brand loyalty and drive sales.
* WHS principles and application of safe workplace practices.
* RSA & RCG Competency Card.
* Senior First Aid.
* Hospitality Management qualifications.
