About Role

Responsibilities
* Lead daily kitchen operations across restaurant, bar, and in-room dining services
* Support menu planning, seasonal updates, and creative dish development
* Supervise, train, and mentor kitchen team members
* Maintain five-star standards for food quality, consistency, and presentation
* Assist with rostering, stock control, ordering, and cost management
* Ensure compliance with food safety, hygiene, and HACCP requirements
* Support efficient service delivery during peak periods and major events
Requirements
* 3–5 years' experience as a Sous Chef or in a comparable senior kitchen role
* Relevant trade qualification (Certificate III or IV in Commercial Cookery or equivalent)
* Strong leadership, communication, and organisational skills
* Proven experience working in HACCP-compliant kitchen environments
* Ability to perform under pressure while maintaining high standards
* Experience with rostering, stock control, and cost awareness
