Description Chef de Partie – Breakfast Operations Crowne Plaza Canberra | IHG Hotels & Resorts Full-Time Position | Immediate Start Available Crowne Plaza Canberra is looking for a passionate and experienced Chef de Partie to join our kitchen brigade with a primary focus on breakfast operations. From our vibrant Redsalt Restaurant breakfast buffet to a la carte and room service offerings, this role is perfect for a confident CDP with strong buffet knowledge and high-volume catering experience (up to 600 guests). You'll also be part of a supportive and collaborative team contributing to our Lume Bar, Crowne Meetings, and room service operations as needed. A Little Taste of Your Day-to-Day Lead and coordinate the preparation, production, and presentation of breakfast service including buffet and room service. Supervise and guide a team of up to 5 chefs and stewards, ensuring quality, timeliness, and compliance with HACCP and IHG standards. Manage mise-en-place, service readiness, and cleanliness of the breakfast kitchen. Support other outlets and meal periods when required, including events and dinner service. Collaborate closely with the Sous Chef and Executive Chef for menu planning, rostering, training, and continuous improvement. What We’re Looking For Experience as a CDP or strong Demi Chef in a high-volume hotel or resort environment, especially for buffet breakfast operations. Confidence working with large-scale catering (up to 600 pax) and handling live stations, bulk prep, and short-order cooking. Certificate III in Commercial Cookery or equivalent qualification. Leadership skills with the ability to mentor and motivate junior chefs. A “can-do” attitude, professionalism under pressure, and pride in presentation. Strong understanding of kitchen hygiene, food safety and modern culinary trends.
