The Role
Merivale is in search of an experienced Head of Wine to join our senior group beverage team. Reporting directly to Master Sommelier Franck Moreau, you will be responsible for the effective management of beverage across a portfolio of venues. You will inspire, lead, and mentor a team of high performing sommeliers. You will collaborate with the Restaurant Management team to deliver exceptional guest service as well as drive revenue and cost results. The ideal candidate will have a proven track record in identifying gaps in management practices (people, process, systems) across multiple product lines, developing and executing effective strategy and plans with tangible results to demonstrate in venues. This is a critical role within Merivale’s sommelier group; you will set the standard for world-class service and share your wine knowledge with esteemed guests to ensure memorable experiences at Merivale.
Key focuses will include:
Execution of strategy
Manage product performance with a guest focus
Deliver operational excellence in venue
Attract and lead beverage team including sourcing, recruiting and induction
Establish and drive collaboration and culture within team
Responsible for financial management of sales budgets in collaboration with the finance team and Group Beverage Manager
