Located 4km from Margaret River's town centre and an equal distance from the magnificent coastline, Xanadu is one of the first vineyards to have been established in the region with a long history of crafting outstanding wines that embody all the region has to offer.

Our restaurant is nestled amongst the vineyard and gardens deep within the Xanadu Estate, our indoor / outdoor venue creates the perfect setting to enjoy the beautiful Margaret River climate and scenery with delicious food and award-winning wine.

About the Role

This is an exciting opportunity to work as Chef de partie at iconic Margaret River Winery, Xanadu Wines.

As a Chef de partie you will be responsible for assisting the head chef in managing a small to medium size team. The position involves significant responsibility, as the Chef de partie must be able to lead other kitchen workers, remain organized and professional, and report vital information to the Head Chef.

Our restaurant is open 5-days for lunches. The successful applicant must be able to work weekends and some evenings for functions only.

We are offering sponsorship for the right candidate.

Responsibilities

Must be familiar with all the daily operations of the kitchen and be able to perform any task in the kitchen as needed. A Chef de pertie must possess strong leadership and communication skills.

* Assist the Head chef with creative seasonal menu writing, purchasing and stock control and understanding kitchen financials.
* Managing and supervising the kitchen team in the performance of their duties.
* Mentor, train and guide the kitchen team, implementing training programs for areas of need.
* Ensuring hygiene, sanitation. food safety & OH&S in the kitchen environment.

About you

This is an opportunity to work for a well-established and successful venue with scope to further influence our culinary direction. This position is for a senior developing chef who possesses key strengths in the following areas.

* Creative culinary style.
* Strong leadership and management skills.
* Knowledge of ordering and cost control.
* Experience as a senior Chef de Partie.
* Proven knowledge and experience in all operational and functional aspects of kitchen administration and operations.
* Proven experience in compiling menus, recipes, and presentation of food.
* Exceptional communication, time management and people skills with the ability to lead a team.
* Strong focus on food safety systems including HACCAP.
* Proven leadership abilities including fostering an open and supportive environment where the team can have fun, take pride in their work and be their best.
* The confidence to promote ideas and make sound decisions under pressure.
* Completion of apprenticeship, certificate 3 or equivalent.
