Head Chef (Live-In – Regional Hotel)
The Clermont Hotel Motel is seeking an experienced and energetic Head Chef to join our kitchen team. You will be responsible for the effective day-to-day operation of the hotel kitchen, delivering consistent, quality meals while maintaining compliance with Queensland food safety and workplace health and safety legislation. The role is hands-on and suited to a small regional hotel, requiring flexibility, accountability, and practical leadership.
Key Duties & Responsibilities
Kitchen Operations
* Prepare and deliver consistent bistro-style meals and hotel functions
* Plan and cost menus appropriate to regional trade levels and customer expectations
* Maintain portion control, presentation standards, and efficient service
* Manage food preparation, service, and cleaning within a small team
Food Safety and WHS Compliance
* Ensure compliance with the Food Act 2006 (QLD) and local council requirements
* Comply with the Work Health and Safety Act 2011 (QLD)
* Hold current Food Safety Supervisor certification prior to commencement
Leadership & Team Management
* Lead, train, and supervise a small kitchen team
* Prepare rosters aligned with business needs and Fair Work requirements
* Provide direction, feedback, and performance management where required
* Maintain a respectful, professional, and reliable workplace culture
Cost & Stock Control
* Manage food costs, ordering, stock rotation, and waste control
* Demonstrated ability to develop, plan and cost menus
* Work within agreed labour and food cost budgets
* Maintain supplier relationships suitable for a regional location
Skills & Experience
Essential
* Trade qualification in Commercial Cookery
* Proven experience in a hotel, pub, or similar commercial kitchen
* Minimum of 5-7 years commercial kitchen experience required
* Strong knowledge of Queensland food safety and WHS requirements
* Ability to work independently in a small, regional team environment
Australian work authorisation requirements will depend on the individual candidate's circumstances
Desirable
* Experience in regional or remote hospitality
* Food Safety Supervisor certification
