A little taste of your day-to-dayEvery day is different, but you'll mostly be;Break down whole cuts or carcasses as needed, ensuring minimal waste and maximum flavourMarinate, portion, and prepare proteins and vegetables for grillingPrep firewood or charcoal, and get the grill fired up ahead of serviceMaintain and monitor wood or charcoal grills throughout the dayAdjust temperatures and fuel levels to ensure consistent heat zones for serviceFollow safety protocols when working with open flamesCook meats, seafood, and vegetables to order over open flame, ensuring accuracy and qualityMonitor doneness, texture, and presentation with a focus on consistencyPlate dishes with precision, maintaining visual and flavour standardsWork closely with the Executive Sous Chef and kitchen team to coordinate timing and service flowSupport other kitchen sections when needed, especially during peak serviceMaintain a clean, organised grill station throughout the shiftFollow food safety standards, hygiene protocols, and kitchen policiesHandle equipment with care, ensuring proper storage and maintenanceShut down grill safely and clean cooking surfacesAssist with end-of-day cleaning, stock rotation, and inventory checksProvide input for ordering, prep sheets, or upcoming menu itemsWhat we need from youA minimum of 2 years' experience in working the grill in high-quality, fast-paced kitchensKnowledge of HACCPSolid butchery skills and respect for whole-animal cookingPassion for natural fuel grilling (wood, charcoal, or open flame)Ability to work wide-ranging hours/days, including nights, weekends and holidays, as needed.What you can expect from usWe give our people everything they need to succeed.
