Job Description: South Indian Cuisine Chef – Townsville, QLD Position Overview
A vibrant and growing hospitality venue in Townsville is seeking a skilled South Indian Cuisine Chef to join the team. This role suits someone with deep knowledge of traditional South Indian flavours, Fine dining experience & techniques, regional specialties, and who can deliver consistent, high‑quality upmarket dishes in a fast‑paced environment.
Key Responsibilities
* Prepare and cook authentic South Indian dishes, including dosa, idli, vada, sambar, rasam, biryani, curries, chutneys, and regional specialties.
* Develop and refine menu items to maintain authenticity while appealing to local tastes.
* Ensure all dishes meet quality, presentation, and portion standards.
* Manage kitchen operations during service, including timing, workflow, and food safety compliance.
* Oversee ingredient preparation, stock rotation, and inventory management.
* Maintain a clean, organised, and compliant kitchen environment in line with QLD food safety regulations.
* Train and guide junior kitchen staff in South Indian cooking techniques and kitchen best practices.
* Collaborate with management on menu planning, seasonal specials, and cost control.
Skills & Experience
* Proven experience as a Chef specialising in South Indian cuisine (minimum 2–3 years preferred).
* Strong understanding of traditional spices, cooking methods, and regional variations.
* Ability to prepare dishes from scratch, including batters, masalas, and spice blends.
* Experience working in Tandoor, and North Indian is an added advantage
* Knowledge of food safety standards and HACCP procedures.
* Strong time‑management and organisational skills.
* Ability to work well under pressure and as part of a team.
Qualifications (Preferred but not essential)
* Certificate III or IV in Commercial Cookery or equivalent.
* Food Safety Supervisor certification (or willingness to obtain).
