Sous Chef - Key Responsibilities 
- Assist the Head Chef in managing daily kitchen operations, ensuring high-quality food production.
- Oversee the preparation and cooking of hot and cold menu items, maintaining consistency and presentation.
- Supervise and mentor kitchen staff, providing training and guidance to maintain operational standards.
- Monitor compliance with HACCP and food safety regulations, ensuring all required documentation is completed.
- Manage portion control and monitor food wastage to maintain cost efficiency.
- Coordinate workflow in a high-volume production environment to meet tight deadlines.
- Maintain a clean, safe, and organised kitchen at all times.
Selection Criteria 
- Certificate IV in Commercial Cookery (essential).
- Proven experience as a Sous Chef or senior chef in a large-scale commercial kitchen.
- Strong understanding of HACCP and food safety procedures.
- Ability to lead, motivate, and develop a kitchen team.
- Excellent organisational skills with the ability to work under pressure.
- Flexibility to work on a rotating seven-day roster (essential).
