We're looking for a Pastry Sous Chef to help lead this space—someone who balances technical skill with creativity and thrives in a kitchen where detail matters.
The Role
Working closely with the Executive Chef and Pastry Chef, you'll support the day-to-day running of the pastry kitchen. You'll guide the team, shape the offering, and ensure every plate that leaves the pass feels considered and complete.
What You'll Do
* Lead service across all pastry outlets, from breakfast to evening dining
* Support menu development with a focus on seasonality and local influence
* Maintain consistency, quality, and presentation across every dish
* Train, mentor, and inspire junior chefs
* Manage ordering, stock control, and kitchen organisation
* Uphold food safety and hygiene standards with precision
What You Bring
* Proven experience as a Pastry Sous Chef or strong Chef de Partie ready to step up
* A refined approach to pastry—technique-driven, detail-oriented, and creative
* A natural leader who builds calm, focused teams
* Strong understanding of modern dessert trends and classic foundations
* The ability to move with service while keeping standards high
* A genuine passion for hospitality and guest experience
* Must already have full and ongoing working rights for Australia*
