Mona is on the hunt for an experienced Pastry Chef who is looking to continue their development within a thriving, unique working environment.
This role is responsible for working with the senior pastry chef to support the overall production of the highest quality contemporary pastries and desserts for Mona's diverse estate including The Source restaurant, Faro restaurant and the Wine Bar.
Being in a hands-on role, you'll need to be confident in all aspects of pastry. While maintaining our high standards, you'll also experiment and express your creativity in pushing the boundaries to help to develop new products that complement our other food & beverage offerings.
THE GIG:
* Deliver pastry offerings and ensure pastry standards are maintained to meet guest expectations;
* Support all aspects of pastry presentation and operations, including maintenance, mise en place, and service;
* Demonstrate pastry preparation and cooking techniques, monitoring the quality of dishes at all stages of preparation, production, and presentation;
* Experiment, develop and create new products, presenting your ideas to the Senior Pastry Chef;
* Ensure appropriate stock rotation, monitoring stock levels, and assisting with food costing and control;
* Operate safely within a dynamic, high volume kitchen environment while adhering to Food, Health, and Safety guidelines;
THE YOU:
* Must be flexible and able to work weekends (our days of operation are Thursday - Monday)
* Proven and recent experience in multiple aspects of patisserie and pastry production in a high volume commercial kitchen;
* Commercial cookery certification with relevant pastry qualifications preferred;
* A passion for food and a willingness to express creativity;
* Curiosity for learning and an ability to support and motivate others;
* Ability to adapt to a regularly changing environment and maintain high standards when under pressure;
* An understanding of safe work practices with a commitment to maintaining a safe work environment.
