Tasks and Duties
As our newChef De Cuisine you will:
Operational Leadership
* Lead daily kitchen operations across all outlets in conjunction w. Head Chef
* Menu planning and execution for Functions and the Café
* Oversee and monitor food and hygiene standards across all outlets
* Monitor and evaluate revenues and expenses to maximise cost-effectiveness
People & Culture
* Supervise, coach, and develop staff, fostering a positive, collaborative team culture.
* Liaise with management and HR on recruitment, training, PM, and communication
* Monitor and review customer service excellence standards and oversee catering rosters
* Ensure staff are up to date on Club activities
Food Safety, WHS & Compliance
* Ensure compliance with food safety standards, WHS requirements, and legislation
* Maintain hygienic, safe work environments
* Conduct regular inspections, hazard reporting, and equipment oversight
Customer Experience
* Support FOH teams in resolving food-related issues quickly and professionally
* Proactive, solutions‑focused approach to service recovery
* Contribute to menu and service improvements.
Administration
* Complete administrative requirements incl. documentation, stock management etc.
* Monitor food and labour costs and inventory management etc.
About You
* Have at least 5 years' experience as a qualified chef
* Be competent and experienced in leading and mentoring a large team
* Have a Commercial Cookery Cert 3/4
* Strong communication skills
* Ability to remain calm, patient and professional even when the pressure is on
* Sound knowledge of food safety standards and adhering to WHS requirements
* Experienced in production, food preparation and stock rotation
* Experienced in menu planning, costing and implementation
* Passion for food, presentation and quality standards
* Availability to work nights and weekends
